One of my absolute FAVORITE fall comfort meals 🍂🍁 Chicken Shepherd’s Pie! It’s cozy, hearty, so easy to make, and one of those dinners the family loves. Nothing fancy, just good old-fashioned comfort food. The leftovers? Even better. 🤌🏼 🍂 CHICKEN SHEPHERD’S PIE RECIPE Ingredients: * A little over 1 lb ground chicken breast (or any ground meat!) * 1 packet brown gravy mix * 1 packet chicken gravy mix * 1 small onion, diced * Minced garlic (measure with your heart) * 1 tsp garlic powder * 1 tsp onion powder * Salt & pepper to taste * 4 medium-large Yukon Gold potatoes * Butter & milk for mashed potatoes * 1 bag frozen corn * 1 can cream-style corn * A few extra pats of butter * Shredded Gruyère or sharp white cheddar (optional) * Sprinkle of Parmesan (optional, but why not?) * Fresh parsley for garnish Directions: 1. Preheat oven to 425°F. 2. In a skillet, cook ground chicken with diced onion and garlic. Add both gravy packets, garlic powder, onion powder, salt and pepper. Prepare the gravy with water according to packet directions, adjusting as needed, and simmer everything together until the chicken is cooked through and the mixture is nice and saucy. 3. Meanwhile, boil your Yukon Gold potatoes and mash with butter, milk, salt and pepper. Make them however you love them! Instant mashed potatoes work too. No judgment here. 4. Spread the chicken mixture evenly in the bottom of a baking dish. 5. Layer frozen corn over the chicken, followed by the cream-style corn. Add a few pats of butter and a little salt and pepper. 6. Spread mashed potatoes evenly over the top. 7. If you’re feeling extra, add shredded Gruyère or sharp white cheddar and a little Parmesan. 8. Bake at 425°F for approximately 30 minutes, until golden and bubbly. You can also bake it lower and slower if you prefer! 9. Let it rest for a few minutes, sprinkle with fresh parsley, and DIG IN!
