Chicken Parm Meatball Sliders ππ§π Made these for a party and they were GONE so fast β absolute crowd pleaser and easier than you think! The meatballs: ~2 lbs ground chicken breast, salt + pepper to taste, onion powder + garlic powder (about a tbsp each β I measure with my heart π«Ά), ~ΒΎ-1 cup panko breadcrumbs, 1-2 tsp jarred or fresh minced garlic, 1 tbsp fresh chopped basil, ΒΌ cup olive oil, ΒΌ cup milk, 2 tbsp tomato paste, 1 egg, optional: 1 tbsp honey, 1/2 cup sauteed onion (I buy the frozen ones you pop out in cubes, soooo easy! I defrosted first). Mix it all together and form into 1Β½ inch meatballs. Brown them in batches in olive oil on all sides β no need to fully cook through! The sauce: While meatballs are browning, heat up 1Β½ jars of your fave marinara (I used Raoβs!) and season with onion powder, garlic powder, a little honey, and salt. Drop browned meatballs into the simmering sauce and let them cook for 15-20 min. The sliders: Grab 2 packs of soft dinner rolls or slider buns. Make a quick garlic butter β melted butter + garlic salt + dried basil. Brush the inside of each bun, place a meatball on one side, layer sliced provolone on both sides of the bun, and bake open-faced at 375 for ~5-8 minutes until the cheese is bubbly. Close them up, brush the tops with more garlic butter, and serve with extra marinara for dipping. π€ Optional: add a fresh basil leaf to each slider β doing that next time for sure!
