Italian Penicillin AKA Chicken Pastina Soup! 🇮🇹🍲 WHERE HAS IT BEEN ALL MY LIFE?! 😂 I even made homemade bread to go with it, and I’m already craving it again! Here’s how I made it! 👩🏼🍳 Ingredients: 1 whole onion, roughly chopped A few handfuls of peeled carrots, roughly chopped A few stalks of celery, roughly chopped 2 tbsp butter 8 cups chicken broth or bone broth (or 8 cups water with Better Than Bouillon chicken base, my favorite!) Several cloves of garlic (measure with your heart!) A few sprigs of fresh rosemary and thyme 1 Parmesan cheese rind (optional, but HIGHLY recommended!) Salt and pepper to taste 1 tsp ground turmeric 1 tsp ground ginger 1 tbsp honey Pastina pasta (I used a whole box, but you could definitely use less!) Shredded or chopped rotisserie chicken (optional, but I wanted the protein!) Extra butter and LOTS of freshly grated Parmesan Directions: In a large pot, sauté your onion, carrots and celery in a couple tablespoons of butter. Cover and let them soften a bit. Add your broth, garlic, rosemary, thyme, Parmesan rind, turmeric, ginger, honey, salt and pepper. Cover and simmer until the vegetables are nice and tender. While that’s simmering, cook your pastina separately according to the package directions. Remove and discard the herb stems and Parmesan rind. Scoop out the softened vegetables and add them to a blender with about ½ cup of the broth. Blend until smooth and creamy, then pour everything back into the soup pot. Add your chopped rotisserie chicken to the broth and let everything warm through. Taste and adjust your seasonings! Toss your cooked pastina with a couple tablespoons of butter, a little salt and freshly grated Parmesan. Add your pastina to a bowl, ladle that delicious chicken broth over the top and finish with an ABUNDANCE of freshly grated Parmesan. Don’t be shy! Save this one for soup season and let me know if you make it! ❤️ #CookingWithMichelleSays #ItalianPenicillin #PastinaSoup #SoupSeason #EasyDinnerRecipes
