I will definitely be making this again in the very near future because it was for Super Bowl, I didn’t count calories or try to make this high protein, but I bet you could swap the sour cream for Greek yogurt and I could probably add in my high protein ranch dip mix and make this a high protein, lower calorie dish 🙌🤎 Full recipe Ingredients: -1 bag frozen sweet corn - 3/4 cup mayo - 3/4 cup sour cream - 1/3 cup cream cheese - salt & pepper to taste - 1 tbsp garlic powder - 2 tsp or paprika - 2 tsp chili powder - juice of 1 lime - 1 cup cojita cup crumbled cojita cheese - 3/4 cup jack cheese shredded - chopped cilantro for garnish Instructions: Mix all ingredients except save 1/3 cup of jack cheese and 1/3 cup of cojita cheese & hold cilantro for garnish. Mix into an oven safe dish, top with remaining cheese (hold some cojita for topping if desired). Bake at 375 for 30 min or until golden brown and bubbly. Top with cilantro and remaining cojita.
