COBBLER TOPPING * 1/2 cup all-purpose flour + 2 TBSP * 1/2 cup almond flour * 1.5 Tbsp granulated sugar * 1 tsp baking powder * 2 TBSP milk * 1 tsp vinegar * 1/2 tsp cinnamon * 6 TBSP frozen salted butter, grated * 2 bananas, mashed (1 cup) * Pinch of salt, optional BERRY ELEMENT -4 heaping cups fresh or frozen berries (I used raspberries and wild blueberries) -1 to 2 TBSP coconut sugar (or more depending on how sweet you like it and how sweet your berries are) -1.5 TBSP flour -turbinado or granulated sugar for sprinkling on top 1. Preheat oven to 375F. Lightly grease or butter your baking dish. I use a 2.5 quart @lecreuset Dutch oven. 2. Mash bananas in a bowl, pour in the milk and vinegar, mix and set aside. 3. In another bowl combine dry ingredients. Grate in the frozen butter and toss until it resembles a course meal. 4. Combine both mixtures, don’t overmix 5. Place dough in fridge while you prep the berries. Combine berries with coconut sugar and flour. 6. Pour berries into your baking dish. Remove dough from the fridge and Plop onto berries, making about 5 circles, leaving space between each one to allow for maximum crispiness and steam to escape. 7. Sprinkle turbinado sugar over the top and bake for 40-47 minutes or until golden brown and bubbling.
